MONSTER STYLE COOKIES
Prep Time: 45 minutes Yield: 1 ½ dozen
Ingredients:
¾ cup creamy peanut butter
½ cup butter or margarine, softened
¾ cup packed brown sugar
½ cup granulated sugar
1 teaspoon vanilla
2 eggs
1 ¼ cups all-purpose flour
1 teaspoon baking soda
2 ½ cups quick cooking oats
½ cup white vanilla baking chips
½ cup sweetened dried cranberries
Directions:
Heat oven to 375°F. In large bowl, beat peanut butter and butter with electric mixer on medium speed until creamy. Add brown and granulated sugars, beat until fluffy. Beat in vanilla and eggs until well mixed. On low speed, beat in flour and baking soda. Stir in oats, baking chips and cranberries.
On ungreased cookie sheet, drop dough by ¼ cupfuls 3 inches apart.
Bake 11 to 15 minutes or until edges are light golden brown. Cool 1 minute; remove from cookie sheets to cooling rack.
Kitchen Tips: To make 3 ½ dozen smaller cookies, drop dough by tablespoonfuls instead of ¼ cupfuls. Bake 8 to 10 minutes.
Have semisweet chocolate chips on hand? Go ahead and use them instead of the vanilla chips.
